Mountain Tasting Progression Launch

The Mountain Progression
Beginning November 2
As the last leaves fall and the Catskills prepare for winter, a new season begins at The DeBruce.
Our Mountain Progression tasting menu draws inspiration from the forests, mountains, and changing landscape surrounding us. With the growing season behind us, our kitchen turns to the deeper, earthier flavors of the colder months, celebrating foraged ingredients, wild mushrooms, open-fire cooking, and the quiet beauty of the season.
Thoughtfully crafted by our culinary team, each course reflects a connection to the land and the rhythms of nature, offering an intimate dining experience rooted in the Willowemoc Valley.
Farm Progression
-
During our 9 years at The DeBruce we have been gifted with fruitful partnerships with many passionate farmers and producers. This is their time to shine and ours to benefit from their hard work and skill. The back kitchen door opens daily and through it walks more and more bushels of raw material from which we can create.
For the Catskills and our Valley we are sleepy sneaky in how much talent there is around us. We let them do their thing and then work our tails off to make into magic for our guests.
You can find our Farm Progression menu here.
